For this exquisite evening, our Chef has created a sophisticated menu featuring seafood, home made pasta, Filet Mignon and an assortment of sweets.
PJ Connolly, our Sommelier, working with the Wine Master of Orin Swift designed each course to expertly pair a wine that highlights the intricacies of each dish with the unique characteristics of each wine.

Insalate Di Mare
Calamari, shrimp, scallops, celery hearts, garlic, herbs, fresh lemon juice, extra virgin olive oil
2016 Blank Stare Sauvignon Blanc
Tight at first, then generous on the nose, the wine bursts with classic aromas of white peach, pear and freshly cut grass as well as stone, butterscotch, and clove. Shards of minerality, white fig and lemon zest dominate the palate, with beams of acidity following through the extensive finish.
Gnocchi Di Patate
House made potato gnocchi in a veal and chicken ragu
2016 Abstract, Grenache, Syrah, Petite Sirah
Immediate popping aromatics if juicy red and dark fruits – raspberries, cranberries, dark plums and plutos – and a hint of deep earthiness are present in the glass. On the palate, the wine is big and massive yet incredibly smooth with similar fruits and a touch of sweet cream. With a luscious and velvety mouthfeel, the wine finishes with a lingering ripe black plum and fades softly and slowly.
Filet Mignon Modenese
Stuffed with burrata mozzarella in a rich tomato sauce
2015 Palermo, Cabernet Sauvignon
Deep and luring aromas of raspberry and ripe cherry are intermingled with accents of star anise, five spice and freshly steeped black tea. The entry is smooth with a combination of cassis and blackberry with a satiating suppleness. Ultra- round and soft, the wine finishes with reverberating length.
2015 Papillon, Bordeaux Blend
An intense ink with a garnet rim, the wine opens with powerful aromatics of cassis, ripe boysenberry, and chaparral with hints of graphite, sage, fire-roasted meats and fresh brioche. The entry floods the palate with ripe dark fruit flavors of blackberry and black cherries as well as fresh minerality and a touch of kir and crème de menthe. With traces of tannin, the wine finishes with a lingering sweet licorice and a smooth acidity. Overall, this vintage of Papillon truly characterizes the theme-bold and massive yet also delicate and complex.
Tasting of Assorted Chocolate Sweets
A brooding hue and viscous consistency, powerful aromas of crème de cassis, boysenberry, and ripe cherries are complemented by a soft minerality and hints of dark chocolate. The entry is smooth with dark plums and a charred meatiness that floods to create a velvety texture that lingers.

The history of Orin Swift Cellars dates back to 1995 when on a lark, David Swift Phinney took a friend up on an offer and went to Florence, Italy to spend a semester “studying”. During that time, he was introduced to wine, how it was made, and got hooked. A few more years of university led to graduation and eventually a job at Robert Mondavi Winery in 1997 as a temporary harvest worker. Deciding that if he was going to work this hard, it would eventually have to be for himself, so in 1998 he founded Orin Swift Cellars; Orin is his father’s middle name and Swift is his mother’s maiden name. With two tons of zinfandel and not much else, he spent the next decade making wine for others as well as himself and grew the brand to what it is today.
